Y’all, I’m addicted to watermelon! I’ve been eating my weight in the stuff and can’t be stopped! Must have something to do with them being in peak ripeness which is also why July has been named National Watermelon Month!  At one point last week, I had four, yes, four whole watermelons at the house! Favorite way to eat is just go in, face first on a slice but we’ve also enjoyed several batches of salad using fresh mint, goat cheese, purple onions with a dash of balsamic vinegar. I recently pinned this recipe and would love to try and grill some!

When I was in Nashville I picked up the pretty one above at a small farmers market and we cut into it last week. It’s a lot more flavorful than the regular ones and prettier but whether they come from Kroger or a farm, they are filling and hydrating and my current go-to!

In case you’re interested to know, here’s some fun facts about my #1 snack via Mercola.com

-It’s both a fruit and a vegetable! (Like a tomato, only watermelons have more lycopene which is a great cancer fighter-more on that here)
-Both the seeds and rind are completely edible! (In fact, the rind has a TON of vitamins and can be made into smoothies)
-They are made of 91% water! (Well duh. But still, next time you’re at trivia, you’ll get the % correct)
-Rich in anti-inflammatory substances! (Get out of here sore muscles!)

Tips for picking the perfect melon:

-Look for the spot where it sits on the ground, should be pale and yellowish not white or green
-Should be heavy for it’s size (this one felt like it weighed a 100lbs!)

I don’t know about you, but now I’m craving some, good thing we still have plenty at home!
